Christmas 2012

I don’t know about you but I had the best holiday that I have had in a while this year. So many wonderful memories, so many wonderful people, and so much delicious tasty food!

This year in addition to doing a lot of cooking for my own family, I was excited to have the opportunity to cater for a family of 25 who was interested in the macrobiotic diet principles! So I guess you can say that for a whole week I was a proper lady and spent a lot of time in the kitchen.

Wine aside, lets continue onto the foodstuff shall we?

For the first time I made a vegan cheesecake – HOLY SWEET MOLY. YUM! It was an incredible hit, I only got one piece and the rest was gobbled up by the family. Definitely going to put this recipe in the to make again box.

I also made Chocolate Mint Brownies using this recipe which I got from VegNews. Delicious! It was actually requested that I make a second batch to send up to friends/family in Michigan.

Anyone up for some homemade pecan pie?

In addition to lots of yummy desserts I made a bunch of main and side dishes which included..

  • Cauliflower Mashed Potatoes (using this recipe which I modified to make vegan)
  • Green Beans Almondine
  • Sweet Potato Casserole
  • Vegan Shepard’s Pie (using this recipe)

Annndddd quite possibly my new favorite thing to make : FUDGE!

Making all of this required marathon energy so of course I had oodles of coffee..

Couldnt ask for a more delicious soup on such a gloomy day. One of the things which is great about my university is that they really care about their students. Last semester I began a small petition to get more vegan/clean options in our cafeteria, and guess what? They put in a new station called the Pure Station, where they serve all raw and vegan foods. SCORE!!! I don’t think I could be happier if I tried. 🙂

Heres to hoping that this is the beginning of a whole slew of new healthy and unprocessed options in my university’s cafeteria!

S is for…

Happy Wednesday!

Just a little update since I’ve had a few people checking in to see how im feeling. I’m feeling a TON better, and hope that I continue to do so. I’m still really tired all of the time, but I think that all of the extra sleep that I have been getting is doing my body a lot of good. I didn’t realize how run down I was until it was too late. But in the future I am going to have to make sure that I take better care of the ol’ fuel tank so this doesn’t happen.

Moving along to the best thing that has happened to me today…

Ahhhh fresh strawberries. One of the many reminders that spring has sprung, even though mother nature may have not caught wind of that yet!  Today I was able to enjoy a whole bunch of fresh strawberries, and they were dee-lish!

So to honor my case of strawberry fever I give you some yummy recipes featuring this star ingredient!

Im all germy!

Ewwww germs!

Over the course of the past few days I’ve gotten a cold, but not just any cold its like a MEGA COLD!

Lets check the symptoms..

  • Sniffles.. Check
  • Sore throat.. Check
  • Mega tired.. Check

I’m not quite sure what I have. I’m hoping that its just the common cold, but I’ve heard that strep throat is going around campus. Ew!

Onto some recent eats of late..

A delicious wrap from Andrea’s Garden. A sprouted grain wrap, with roasted portobello mushrooms, cucumbers, hummus, cranberries and tomatoes.

Twas muy delicious!

Review Alert!

Since I have been busier than I would have liked lately I have been relying more on packaged bars. A newbie I tried was the Chocolate Brownie Cliff Bar.

The verdict?

It was indeed chocolaty. But since I am not a huge chocolate lover, it was only so so for me. I would prefer to have my Blueberry Crisp.

I was also able to try a Nakd Bar in Cashew Cookie (remember when I tried Pecan Pie?)

The verdict?

I love the size of these bars, they are not too big or too small they are just right. Perfect for on the go and just FYI the wrappers don’t make loud noises (perfect for snacking in class!) The texture was great too, not too dry or moist, and was nice and smooth!

I would so eat one of these bad boys again!

One thing that I am really missing since I have come to college is oatmeal. Ahhh how I miss thee. Who would have ever thought I would trade all the hummus in the world just for a bowl of oatmeal with some bloobs.

Perhaps a bowl of my Groovy Green Oats, or Carrot Cake Oatmeal?

Come to mama!

Lets hope I can get some soon, because that is what my tummy is craving right now!

On a happy note, I got my big sis last week!
