Happy Christmas Eve Eve!

I’m so glad you all are enjoying my new recipe for vegan snickerdoodles, which are just in time for Christmas! I’ve had a few emails asking me how my Zumba class went monday and wait for it – it went great! 🙂 I was a bit nervous to go into a new place and co-teach which is something I have never done. However I had the most fantastic experience. It was so great to be able to feed off of my instructor friends energy, and we both had a blast. Also I was able to try out some new choreography which was fun!

Latley I have been looking into getting a heart rate monitor so I can better attract the efficiency of my workouts. I have been looking at a few brands including Ekho, Sport Line, Acumen and Barska. For those of you who use a heart monitor, what brand do you use? Anyone have experience with any of these?

Onto some recent eats!

Lots of yummy apple munching! Only this particular apple was much more delicious thanks for Katie’s banana butter. Om nom! Delicious!

Who thought I could love peanut butter more than I already did?


Another delicious eat I have eaten recently was a big ol bowl of steamed veggies, sun-dried tomatoes and then this..


The dairy free cheese that has been changing the world. In addition to being vegan it happens to be gluten-free and soy free. Oh and did I mention delicious? 😉 Even the most basic bowl of veggies was turned into a YUM-O dinner after a sprinkling of Daiya, which I proceeded to melt on top.

I cannot believe that tomorrow is Christmas eve! I have a busy day ahead of me including making biscotti, decorating and some last-minute gifts to work on. I just love this time of the year so very much. Tis the season to be merry!

  1. Hey Michal! It’s been so long! I am still reading your blog though. 🙂

    I hope you get a HRM, they are so useful! I am getting one for Christmas (only 2 more days!). Actually, I will get it Christmas Eve. So excited! I want to use it right away, but probably won’t be going to the gym until Sunday after I get it. 😦 I am interested in how high my HR gets when I spin and when I do Body Pump. It’s amazing how high HRs can get when weight lifting, because it doesn’t really feel like it to the person lifting, like it does when someone spins or does cardio. I am also interested in how many calories I am burning. I need to make sure that I am getting enough each day.

    I am getting the Polar HRM. I think it’s an F6..the pink one.

  2. yum yum for daiya! Yes i’ve tried them both (cheddar and mozz.) I like cheddar better! 😀 I’m okay with it, but I can live without them totally fine 🙂

    Congrats on your new zumba adventure there! Seems like you had a good time!

    Have you ever wondered why apples are so good with nut butter?!?! 😀 Ha ha 🙂

  3. I want to try Daiya so bad! It looks so much like cheese – it would be great to throw on a veggie pizza, or mix in with a pasta dish, or a salad like you did. Sadly I’m from eastern Canada , well not sadly I love it here!, but unfortunately when things come to Canada they tend to stop a Montreal and forget that there are still provinces to the east 😦 – I haven’t been able to find anywhere that carries it around here. Looks yummy though!
