I’m feelin blue…

Actually that’s a total lie.

I’m feeling quite the opposite of blue… orange? I’m such a happy camper right now its not even funny, summer is great and I cant be more excited for school to start. πŸ™‚

But there has been major amounts of blue in my life lately.

Including this new workout top which I adore. Why yes I did take these pictures in the locker room at my gym.

And check out my new Nike’s! Love them too! And I got them on sale even better. What is your favorite brand of running shoe? Why?

I wish I could have snapped a picture of someones face when they came in a saw me standing like that. Can you say awkward??

On the food front these days I have been eating lots of this oatmeal everyday for breakfast. I still find it incredible that I keep coming up with new things do to with it.

Blueberry Muffin Oats

1/3 cup oats

2/3 cup water (or more for a thinner consistency)

2 tbsp flax meal

1 tbsp wheat germ

1/3 cup frozen blueberries

1 tsp vanilla extract

1-2 tbsp shredded coconut flakes


Heat water to a boil, in a bowl place all of your ingredients except your vanilla extract. Mix well. Add water once boiling, mix and then add your vanilla extract.


I also added some sliced banana and a handful of almonds to mine, yum! I enjoyed it parfait style.

I’m really getting into the groove with eating clean and working out. I love love love how much energy I have, and how much more like my old self I feel. Tonight I have a Zumba class! I am taking every class that I can since I am getting certified this september, i want to make sure I have as much practice as possible.

Also Earth Mama’s birthday is coming up this friday, and I want to make her something really special. Im thinking a cake. Something chocolate. Can you share your best chocolatey cake recipes with me??

    There is this fabulous Chocolate Cake recipe in “How it all Vegan!” by Tanya Barnard and Sarah Kramer– oh girl, it is so great!!! Months ago, I posted about it on my blog. Here’s the link! Hope you try it! (Just put your favorite frosting recipe on top– I always make mine super chocolaty using lots of cocoa, and then EarthBalance, powdered sugar, and vanilla extract.)


    (Actually, this cake is so yummy my husband wants to make it all the time, but I usually discourage it because, believe it or not, I’m trying to live healthy! I know if there’s dessert lying around I’m going to eat it. It’s sabotage! You know how that goes, right?)

    My favorite brand of running shoes are under armour. Every since I have gotten those then I have less shin splints.

    Your blueberry oats look so good! I think I might have to make those soon. I just bought the quaker blueberry muffin instant oats. Have you tried those?

    That is so awesome that you are going to become a zumba instructor. Whit, Ash, and I want to become Turbo instructors!

  7. You look so happy and healthy! πŸ™‚ For the cake, I recently made the “lower fat deep chocolate bundt cake” from Veganomicon. I used whole wheat pastry flour and replaced all of the sugar with a stevia baking blend for my grandfather who is diabetic. I definitely would use sugar if it were just for me but the cake was still delicious. It uses coffee for the liquid.. yumm πŸ™‚ For a more traditional flavor I agree with the VCTOTW chocolate cupcake recipe, you can totally just make a cake (instead of cupcakes) with it.

    Been a while since I’ve been to your blog, and not because I don’t want to (to the contrary!) but because I just can’t load your blog. Compared to various other sites and blogs I go to, your blog takes a ridiculous amount of time to load. Right now I’m staying somewhere with slower internet, but your blog still takes Much more time to load that other sites and blogs, unforutnately…
