Loco-nuts!

Hello Muffins!

Keeping true to my namesake and all things muffiny I am happy to present a new recipe for a tasty and healthy muffin that I am just going crazy for! 🙂 Its chewy, moist, coconutty, cherry-filled and just a wee bit crunchy. Could you ask for a better muffin? I think not!


Coconut Loco-nut Cherry Muffins

Ingredients

2 cups whole wheat pastry flour

1/4 cup organic cane sugar

2 tsp baking powder

1/2 teaspoon baking soda

3/4 cup of your favorite granola

1/4 cup canola oil

1 cup vanilla soy yogurt

1/2 tsp vanilla extract

1/2 tsp almond extract

3 tbsp coconut flakes

1/2 cup dried cherries

energy egg replacer (for two eggs)

Directions

Pre-heat your oven to 350 degrees. In one bowl mix together the flour, baking powder, baking soda, and cane sugar. Stir in granola. In another bowl mix together the soy yogurt, oil, ener-g egg replacer and the vanilla and almond extracts. And dry ingredients to the yogurt mixture and stir gently until just combined. Add in the dried coconut flakes and the dried cherries. Mix until combined. Line a muffin tin with paper liners and spoon the batter into the cups until nearly full. Sprinkle the top with more dried coconut and a few dried cherries.

Bake at 350 degrees for 20 minutes or until golden brown and delicious.

Enjoy!

These taste super yummy warm right out of the oven with a bit of melted soy butter. Or sprinkled with cinnamon and sugar and grilled for a minute or two.

I am a huge granola lover. One thing that I don’t love about it however is how many granolas are usually high in fat, sugars and oils. How does someone make something so healthy into something so naughty?

Regardless I have been on the hunt for a while for a delicious granola that is made up of whole grains, minimal sugar and no artificial sweeteners or preservatives. And I found it! Bob’s Red Mill Natural Granola.

Ingredients – whole grain rolled oats, pineapple syrup, pear concentrate, peach concentrate, evaporated cane juice, maltodextrin*, natural vanilla flavor.

*maltodextrin is easily digestible, being absorbed as rapidly as glucose, and might be either moderately sweet or almost flavorless. Just FYI! 🙂

Natural Granola (No Fat Added) is gently toasted clusters of whole grain rolled oats, pure fruit and cane juices, and dried fruit for an all-natural, delicious, and healthy granola.

The verdict, would I buy this again? Yes. I love that this granola still give the satisfying crunch and sweetness that you want with your bowl of cereal, without all of the junky additives. Plus since this granola only contains 180 calories in one half cup serving, how could you say no? I thought that this was the perfect and final addition to my Coconut-Loconut Cherry Muffins.

  2. i didn’t know bob’s red mill made granola! that looks really good – i’m gonna have to try it out! my favorite granola is kaia food’s chocolate buckwheat granola… so good! and i just made my own version of it – but a dark chocolate version! will be posting about it soon, hopefully!

  3. I love this layout!! I don’t know if I’ve just been out of it and not noticed it recently, but it fits your blog perfectly. My favorite granola is Bear Naked Original. I ate it by the bag in middle school! Hope you have a wonderful day 🙂

    Favorite kind of granola? Is there more than one kind?? Okay, I didn't know that. But if you consider the ones with chocolate chips/that are chocolate flavored, then those are my favorite! 😀

  5. I haven’t had muffins in so long but those pictures are making me want to make some! They look delish!
    I will have to try that granola out. I think they sell it at Trader Joe’s.
    I don’t have a favorite granola. I am always trying out something different every time I go to pick some up.
