Crazy delicious make your own pita sandwich.
On whole wheat pita I had adzuki bean spread, avocado, roasted red peppers, vegan cheddar cheese, banana peppers and spinach. Holy moly!
This was quite possibly the best sandwich that I have ever eaten!
So today I had a crazy day of running around!
I played un-intentional hooky from school today (I was going to go in tardy, but ended up losing track of time), and i ended up shopping for six straight hours. What was I looking for? My graduation dress. With only fifteen days of school left I still hadn’t found the dress that I am going to be wearing under my cap and gown. So many choices!

Sweet and simple. But its white which I guarantee I would ruin in under three minutes.
I was totally unprepared for today’s shop-a-thon. Usually i will pack a snack like trail mix, or a bar or something in my bag to tide me over. But today I had nothing. Eep! A quick trip to target had me coming out with this… a Cool Mint Chocolate Cliffbar.
Ingredients: Organic Brown Rice Syrup, ClifPro® (Soy Rice Crisps [Soy Protein Isolate, Rice Flour, Barley Malt Extract], Organic Roasted Soybeans, Organic Soy Flour), Organic Rolled Oats, Organic Evaporated Cane Juice, Organic Soy Butter, Chocolate Cookies (Organic Oat Flour, Organic Evaporated Cane Juice, Sunflower Oil, Cocoa, Unsweetened Chocolate, Salt, Baking Soda, Soy Lecithin, Natural Flavors), ClifCrunch® (Apple Fiber, Organic Oat Fiber, Organic Milled Flaxseed, Inulin [Chicory Extract], Psyllium), Cocoa (processed with alkali), Organic Fig Paste, Icing (Organic Evaporated Cane Juice, Cocoa Butter, Soy Flour, Soy Lecithin, Natural Flavors), Natural Flavors, Sea Salt, Green Tea Extract (50mg caffeine equivalent).
This tasted just like a thin mint girl scout cookie (which used to be my favorite, and sadly aren’t vegan. hmm… maybe I should try to veganize them? ;)) I loved how the chocolate flavor wasn’t over powered by the delicate minty-ness. Plus it only has 250 calories per bar and 10g of protein. It kept me well energized and satied until I could get home to eat lunch.
The verdict? Would I buy this flavor again? Yes please! I would so buy this again, this has to go on my list of favorite Cliffbar flavors.

The biggest cookie pie ever, from The Singing Bowl of course!
Literally it was bigger than both of my palms, it took me over four days to eat it even with the help of Earth Mama, who was happy to oblige.
I hope you all had a wonderful mother’s day, and to all of you mama’s out there I hope you were able to celebrate it with your family. Despite having to work all day, I was still able to spend some quality time with my mom, and to try out some new recipes in the kitchen!
