This is the recipe that I was talking about making this past sunday – originally this recipe was adapted from the “How to Cook Everything Vegetarian Cookbook.” I checked out this cookbook from the library and have had so much fun flipping through it. It includes a variety of vegetarian recipes, and most of them can be adapted to make them vegan. In addition it also has nice sections on all the different fruits and vegetables, and goes into detail on how to properly cut, prepare and store each one. It also goes through the basic methods of cooking – grilling, boiling, steaming ect – which is very helpful for beginners!
A very simple recipe to start out with, I simply changed some of the spices, added the potatoes and scallions and omitted the butter.
Simple Lentil Soup – adapted from The Everything Vegetarian Cookbook
6 cups water (I have also used vegetable stock, use what you have!)
1 cup lentils
2 small potatoes, washed and finely chopped
2 cloves garlic, minced
1 stalk celery, chopped
1 carrot, chopped
1/2 cup scallions
2 tbsp dried thyme
Salt & Pepper to taste
Place water/stock in a pot and let it come to a gentle simmer on the stove. Add the celery, carrot, lentils, thyme, garlic. Let simmer on the stove 10 minutes stirring every so often. Add potatoes, scallions, salt and pepper and let it finish cooking until lentils are soft.
Makes 3-6 servings.
It is an absolutely quick and delicious one pot meal to make, and the perfect thing to warm you up on these chilly fall days!
